Moo Goo Gai Pan(Chicken With Mushrooms And Pea Pods)
- 4 chicken breasts, boned, skinned and cut bite size
- 1/2 c. white wine or vermouth
- 2 Tbsp. cooking oil
- 2 scallions or green onion, sliced
- 1 c. celery, cut bite size
- 1 pkg. frozen pea pods
- 4 oz. fresh mushrooms, sliced
- 1 can sliced water chestnuts
- 1 c. chicken broth
- 2 Tbsp. cornstarch, dissolved in cold water
- slivered almonds (for garnish)
- Marinate chicken in wine while you are cutting the vegetables. Using a wok or large skillet, "stir-fry" onion, celery, pea pods, mushrooms and water chestnuts in the oil.
- Stir constantly.
- This will only take a couple of minutes.
- Vegetable are done when they reach a bright color and are still crisp.
- Remove from wok or skillet to an additional bowl.
