Caramel Apple Dumplings Recipe
- 1 1/2 c. SR flour
- 1/2 c. Plain flour
- 125 gm Butter or possibly cooking margarine
- 1 Tbsp. Caster sugar
- 2 Tbsp. Cool water, up to 3 Good squeeze lemon juice
- 6 lrg Granny smith apples
- 1 c. Brown sugar
- 1 c. Water
- 1 x Heaped tsp. butter Juice 1/2 lemon
- Sift flours into a basin.
- Rub in butter, add in sugar then make into a dough with water and lemon juice.
- Knead lightly using little extra flour.
- Peel apples and remove cores (using apple corer) then cut apples in halves from stem to base.
- Divide the pastry into 12 portions.
- Roll each portion out thinly and mould around each apple half.
- Place them rounded-side up in a large baking dish.
- Make a few steam holes in the pastry with a fine skewer.
- Put brown sugar, water, butter and lemon juice into a saucepan and bring to the boil, simmer for a few min.
- Pour this syrup over the apple dumplings and bake in a warm oven (200 C) for 30 to 45 min.
- Reduce heat slightly after 20 min if pastry is browning too much.
- Serve hot with home-made boiled custard.
