Cashew Vegetable Stir-Fry

  1. Prepare Rice as per instructions.
  2. Heat oil in wok and stir fry onion and garlic for 1 minute.
  3. Add ginger and stir fry for a further minute.
  4. Capsicum, corn and snow peas next.
  5. Add remaining ingredients and stir-fry for another 2 minutes or until heated through.
  6. Spoon rice in bowl and top with mix.
