Wendi's Famous Almond Toffee
- 2 cups salted butter
- 2 cups granulated sugar
- 14 cup water
- 3 cups whole almonds (may substitute other nuts)
- 1 12 lbs milk chocolate chips or 1 12 lbs dark chocolate chips, to taste
- 2 cups chopped walnuts (optional)
- Heat butter, sugar and water in a heavy stock pan on med high heat.
- Stir constantly to 250 F degrees (using candy thermometer).
- At 250 F degrees add nuts and continue to stir to 300 F degrees.
- Pour hot candy into an 11" x 15" jelly roll pan.
- When toffee has cooled slightly (approx 10 min) place half the chocolate chips on top.
- As the chocolate melts spread evenly
- Sprinkle with walnuts if desired.
- When cool, invert the toffee on waxed paper.
- Carefully melt the remaining toffee approx 1-2 min in microwave or over double boiler.
- Spread melted chocolate on toffee.
- Again sprinkle with walnuts if desired.
- When completely cooled and hardened break into small pieces.
- Store in refrigerator.
