Comfortable Yams
- 96 ounces cut yams in syrup
- 12 cup butter (not margarine, it's a disaster)
- 1 cup dark brown sugar
- 1 fluid ounce Southern Comfort
- 14 teaspoon cinnamon
- 14 teaspoon nutmeg
- 14 teaspoon ground ginger
- 14 teaspoon ground cloves
- 14 teaspoon allspice
- 14 teaspoon mace
- 14 teaspoon cardamom
- 1 tablespoon pure vanilla extract
- 1 cup ginger ale (I prefer Vernor's, but any good ginger ale or ginger beer will do)
- 1 (16 ounce) bag mini marshmallows
- Preheat oven to 350 degrees.
- Coat 1 deep casserole dish with butter or non-stick cooking spray.
- Combine Southern Comfort, vanilla, brown sugar and spices until well blended and sugar is dissolved.
- Drain yams and pour into casserole dish.
- Cut butter into small cubes and distribute among the yams.
- Pour spice mixture over yams and toss to coat evenly.
- Bake until bubbly, about 30 mins, remove from oven.
- Add enough mini-marshmallows to cover yams and place under broiler until golden brown.
- Allow to cool 10 minutes before serving.
