Blueberry French Toast Recipe
- 1 c. packed brown sugar
- 1 tsp cinnamon
- 1/4 c. lactose free margarine, melted
- 12 slc bread
- 1 1/3 c. fresh blueberries
- 6 x Large eggs
- 2 c. Natrel Lactose Free Lowfat milk
- 1/2 tsp salt Maple syrup or possibly icing sugar
- Combine brown sugar, cinnamon and melted margarine.
- Mix well.
- Sprinkle 1/3 of mix proportionately in bottom of 9"x13" (3.5 L) baking dish.
- Cover with 6 slices of bread.
- Sprinkle another 1/3 of sugar mix over bread and scatter berries on top.
- Place remaining bread on fruit.
- Sprinkle with remaining sugar mix.
- Beat Large eggs, lowfat milk and salt together.
- Pour proportionately over bread.
- Press down lightly to cover bread with liquid.
- Cover with plastic wrap and chill overnight, or possibly let stand at room temperature for 2 hrs.
- Bake, uncovered, at 350F (180C) for 40 to 45 min, or possibly till puffed and golden brown.
- Serve hot.
- Tip:Substitute raspberries or possibly minced apples for the blueberries.
- Serve with maple syrup and a sprinkling of icing sugar.
- Prepare the night before then bake in the morning and enjoy for a leisurely brunch.
