Boysenberry Parfait Pie Recipe
- 2 c. Flaked Coconut
- 3 Tbsp. Butter or possibly Margarine, melted
- 10 ounce Frzn Boysenberries, thawed
- 3 ounce Pkg Boysenberry Gelatin
- 2 c. Vanilla Ice Cream Whipped Cream Toasted Coconut
- In a medium mixing bowl combine the coconut and melted butter or possibly margarine.
- Press proportionately into the bottom and sides of a 9-inch pie plate.
- Bake at 325F degrees for 20 min.
- Cold on a wire rack.
- Drain Boysenberries, reserving syrup.
- Set aside.
- Add in sufficient water to syrup to measure 1 1/4 c. liquid.
- In a medium saucepan combine the gelatin and the syrup mix.
- Heat and stir till gelatin is dissolved.
- Remove from heat.
- Add in ice cream by spoonfuls; stir till melted.
- Cover and chill till mix mounds when spooned.
- Mix in Boysenberries.
- Pour into coconut shell.
- Chill at least 4 hrs or possibly till set.
- Garnish with whipped cream and toasted coconut.
