Boysenberry Parfait Pie Recipe

  1. In a medium mixing bowl combine the coconut and melted butter or possibly margarine.
  2. Press proportionately into the bottom and sides of a 9-inch pie plate.
  3. Bake at 325F degrees for 20 min.
  4. Cold on a wire rack.
  5. Drain Boysenberries, reserving syrup.
  6. Set aside.
  7. Add in sufficient water to syrup to measure 1 1/4 c. liquid.
  8. In a medium saucepan combine the gelatin and the syrup mix.
  9. Heat and stir till gelatin is dissolved.
  10. Remove from heat.
  11. Add in ice cream by spoonfuls; stir till melted.
  12. Cover and chill till mix mounds when spooned.
  13. Mix in Boysenberries.
  14. Pour into coconut shell.
  15. Chill at least 4 hrs or possibly till set.
  16. Garnish with whipped cream and toasted coconut.
