coconut bread pudding

  1. mix all ingredients, except eggs and egg folks in a large bowl until well blended.
  2. Add eggs and egg yolks, mix well.
  3. Spray a baking dish with non stick cooking spray.
  4. Pour mixture into baking dish, cover with plastic wrap and refrigerate for 1hour.
  5. After 1hour, place bread pudding dish in a water bath, sprinkle with toasted coconut flakes, completely cover with foil and bake at 325F for 1hour.
  6. Remove from oven and serve.
  7. variation; Serve with chocolate sauce
