coconut bread pudding
- 2 eggs
- 4 egg yolks
- 1 loaf french bread, cubed
- 1/4 tsp nutmeg
- pinch mace
- 1/4 tsp salt
- 2 can unsweetened coconut milk
- 13 1/2 oz cream of coconut
- 1 cup sweetened coconut flakes
- mix all ingredients, except eggs and egg folks in a large bowl until well blended.
- Add eggs and egg yolks, mix well.
- Spray a baking dish with non stick cooking spray.
- Pour mixture into baking dish, cover with plastic wrap and refrigerate for 1hour.
- After 1hour, place bread pudding dish in a water bath, sprinkle with toasted coconut flakes, completely cover with foil and bake at 325F for 1hour.
- Remove from oven and serve.
