Italian Vegetable Soup Recipe

  1. Wash Kale well.
  2. Remove froms stens and tear the leaves into med.
  3. size pieces.
  4. Set aside.
  5. Use large nonstick pan over med.
  6. heat and add the olive oil.
  7. Add onion,cooking until sof t. Add carrot, celery and Garlic cooking about 5 mins.
  8. Stir in the tomato puree, tomato paste, and the water.
  9. Bring to a boil.
  10. Add parmesan rind and kale.
  11. Reduce the heat and simmer for 30 mins.
  12. Remove the rind.
  13. Season with salt and red pepper f;lakes.
