Cucumber Fritters with Peanut Sauce
- 1 cup finely diced cucumber, no seeds
- 1/2 cup red onion, finely diced
- 1 tsp fresh grated ginger
- 1 egg
- 1 dash salt
- 2/3 cup flour
- 1 water, add if needed for batter
- 1 oil, for frying. Amount will depend on size of pan.
- 1/3 cup peanut butter
- 1 tsp ground ginger
- 1 dash fire oil or red chili oil
- 1 tbsp sweet soy sauce (kecap manis sedang)
- 1 tbsp honey
- This dish is appropriate for ovo vegetarians.
- For the sauce, add peanut butter, oil, soy sauce, honey and ginger to a microwave safe container.
- Cover and heat for 30 seconds.
- Stir.
- If peanut butter is not melted enough to mix thoroughly, heat for and additional 15 seconds if needed.
- Once the sauce is blended, set aside.
- For the fritters, add the flour, egg, grated ginger and salt to a bowl and mix well.
- Fold in the cucumber and onion.
- The batter should be thick and coat the vegetables, but if it needs a bit more moisture, dribble a bit of water until the desired consistency is obtained.
- Be careful not to add too much water.
- Heat oil in frying pan.
- When it reaches cooking temperature, drop spoonfuls of batter into the hot oil.
- When the fritters start to turn brown, flip them and cook on the other side.
- Place cooked fritters on a paper towel to absorb excess oils.
- Serve warm with peanut sauce.
