Cucumber Fritters with Peanut Sauce

  1. This dish is appropriate for ovo vegetarians.
  2. For the sauce, add peanut butter, oil, soy sauce, honey and ginger to a microwave safe container.
  3. Cover and heat for 30 seconds.
  4. Stir.
  5. If peanut butter is not melted enough to mix thoroughly, heat for and additional 15 seconds if needed.
  6. Once the sauce is blended, set aside.
  7. For the fritters, add the flour, egg, grated ginger and salt to a bowl and mix well.
  8. Fold in the cucumber and onion.
  9. The batter should be thick and coat the vegetables, but if it needs a bit more moisture, dribble a bit of water until the desired consistency is obtained.
  10. Be careful not to add too much water.
  11. Heat oil in frying pan.
  12. When it reaches cooking temperature, drop spoonfuls of batter into the hot oil.
  13. When the fritters start to turn brown, flip them and cook on the other side.
  14. Place cooked fritters on a paper towel to absorb excess oils.
  15. Serve warm with peanut sauce.
