Thyme Scented White Bean Cassoulet

  1. Heat olive oil in large nonstick skillet.
  2. Add onion, carrots, and garlic.
  3. Cover and cook 5 minutes, stirring occasionally.
  4. Place onion mixture in crock pot.
  5. Add beans, vegetable broth, thyme, salt, pepper, tomatoes, and bay leaf.
  6. Cover and cook on low for 8 hours or until vegetables are tender.
  7. Combine bread crumbs, Parmesan, and butter in small bowl.
  8. Toss with a fork until moist.
  9. Stir breadcrumb mixture and sausage into bean mixture.
  10. Sprinkle with parsley.
  11. For Meatless Italian Sausage use a Vegetarian or Vegan sub such as Boca.
