Brown Sugar Cafe Au Lait Rolls
- 250 grams Bread (strong) flour
- 20 grams Nestle bright (if you have it. It is powdered milk creamer from New Zealand).
- 40 grams Soy milk or milk
- 140 ml Slightly strongly brewed coffee
- 25 grams Butter
- 35 grams Brown sugar
- 4 grams Salt
- 4 grams Dry yeast
- 60 grams Walnuts or your favorite nut
- Place the ingredients into the bread maker, make an indent in the flour, and add the yeast.
- Turn it on using the "bread dough course".
- Add the nuts at the add ingredients signal.
- When finished, place the dough onto a floured surface, cut into 9 equal portions using a dough knife, and roll the dough balls to enclose the seam.
- Place the dough with the seam facing downwards, cover with a well wrung out rag; and let rest for 15 minutes.
- Place the dough in the palm of your hand one by one and stretch them to remove the gas.
- Form them back into balls, and place them on a pan lined with parchment paper with a space in between each one.
- Let the rolls sit in a warm spot for about an hour for the second rise.
- Let them rise until they about double in size, until they fill the pan completely.
- You can also use the bread rise setting on your oven.
- If you do, do so at 40C for 50 minutes.
- Bake in an oven preheated to 200C for 5 minutes, reduce to 180C, and bake for 15 minutes.
- Once they have finished baking, immediately flip the pan upside down and take them out, and let cool on a wire rack.
- They are so fluffy it feels like you will crush them!
