Cornish hens
- 2 Cornish Hens
- 6 mini sweet peppers
- 2 celery stalks
- 1/2 cup cubed butternut squash
- 1 Red onion
- 1 tbsp lemon pepper
- 1 tsp salt
- tbsp dried basil
- 1 olive oil
- Preheat your oven to 375
- Clean the outside and clean out the cavity of the cornish hen
- Cut up vegetables
- Mix seasoning together
- Rub the cornish hens down with olive oil and seasoning
- Stuff the cavity of the hens with vegetables
- Cook for 1 hour and 15 min you can turn on broiler when the hour and 15 minutes is up to make skin crispy
