Double Chocolate Orange Muffins
- 1 orange Safeway 1 lb For $1.28 thru 02/09
- buttermilk
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 Tbsp. Magic Baking Powder
- 1/2 tsp. salt
- 2 eggs
- 1/3 cup granulated sugar
- 1/3 cup oil
- 1/2 cup white chocolate chips
- GREASE 12 large muffin tins or line with paper baking cups.
- GRATE rind from orange; set aside.
- Squeeze juice from orange and pour into measuring cup.
- Add buttermilk to measure 1 cup liquid.
- Set aside.
- SIFT together flour, cocoa, baking powder and salt in large bowl.
- WHISK together eggs, sugar and oil until creamy; stir in orange rind and buttermilk mixture.
- STIR liquid mixture into dry ingredients with chips, stirring just until moistened.
- Spoon into muffin cups, filling 2/3 full.
- BAKE at 375F (190C) for about 20 minutes or until firm to the touch.
- Cool in pan 5 minutes; remove muffins and cool on rack.
- Store in airtight container.
