Double Chocolate Orange Muffins

  1. GREASE 12 large muffin tins or line with paper baking cups.
  2. GRATE rind from orange; set aside.
  3. Squeeze juice from orange and pour into measuring cup.
  4. Add buttermilk to measure 1 cup liquid.
  5. Set aside.
  6. SIFT together flour, cocoa, baking powder and salt in large bowl.
  7. WHISK together eggs, sugar and oil until creamy; stir in orange rind and buttermilk mixture.
  8. STIR liquid mixture into dry ingredients with chips, stirring just until moistened.
  9. Spoon into muffin cups, filling 2/3 full.
  10. BAKE at 375F (190C) for about 20 minutes or until firm to the touch.
  11. Cool in pan 5 minutes; remove muffins and cool on rack.
  12. Store in airtight container.
