Surprise Mexican Wedding
- 1 cup butter room temperature
- 1 1/2 cups powdered sugar divided
- 1 teaspoon vanilla extract
- 2 cups flour, all-purpose
- 1/4 teaspoon salt
- 3/4 cup pecans finely chopped
- 48 x milk chocolate stars
- 1 cup powdered sugar
- 1 tablespoon sugar red and coarse
- 1 tablespoon sugar green and coarse
- Preheat oven to 400F (200C).
- In large bowl beat butter, 1/2 cup powdered sugar and the vanilla with electric mixer on medium speed until well mixed.
- Combine flour and salt and add to sugar mixture along with pecans.
- For each cookie, shape a scant measuring tablespoonful of dough around each chocolate star to make 1-inch balls.
- Place 2 inches apart on ungreased cookie sheets, then bake in preheated oven 12 to 15 minutes or until set and bottoms begin to turn golden brown.
- While cookies bake, make sugar coating: In small bowl, mix remaining 1 cup powdered sugar with colored sugars.
- When cookies are done, remove from oven.
- As soon as they are cool enough to handle, roll in sugar coating.
- Set on racks to cool completely, about 30 minutes.
- Roll in sugar mixture again.
