Surprise Mexican Wedding

  1. Preheat oven to 400F (200C).
  2. In large bowl beat butter, 1/2 cup powdered sugar and the vanilla with electric mixer on medium speed until well mixed.
  3. Combine flour and salt and add to sugar mixture along with pecans.
  4. For each cookie, shape a scant measuring tablespoonful of dough around each chocolate star to make 1-inch balls.
  5. Place 2 inches apart on ungreased cookie sheets, then bake in preheated oven 12 to 15 minutes or until set and bottoms begin to turn golden brown.
  6. While cookies bake, make sugar coating: In small bowl, mix remaining 1 cup powdered sugar with colored sugars.
  7. When cookies are done, remove from oven.
  8. As soon as they are cool enough to handle, roll in sugar coating.
  9. Set on racks to cool completely, about 30 minutes.
  10. Roll in sugar mixture again.
