Scandinavian Chicken With Apricots Recipe

  1. Remove skin from chicken breasts.
  2. Mix water, brandy, apricots and currants; let stand 15 minutes.
  3. Heat oil in 12-inch skillet until hot.
  4. Cook chicken over medium heat until brown on both sides, about 15 minutes; drain fat.
  5. Sprinkle chicken with salt, thyme and pepper.
  6. Add apricot mixture and lemon slices.
  7. Heat to boiling; reduce heat.
  8. Cover and cook, spooning pan juices over chicken occasionally, until chicken is done, 35 to 40 minutes.
  9. Sprinkle with almonds.
