Peameal Bacon on a Bun
- 1 Tbsp. oil, divided
- 8 slices peameal bacon
- 1/4 cup Kraft Brown Sugar BBQ Sauce, divided
- 2 red peppers, cut into strips
- 1/2 cup thinly sliced Spanish onions King Sooper's 1 lb For $0.99 thru 02/09
- 2 Tbsp. Miracle Whip Original Spread Family Dollar $3.50 thru 02/07
- 1 tsp. Dijon mustard
- 4 whole wheat hamburger buns, toasted
- Heat 1-1/2 tsp.
- oil in large skillet on medium heat.
- Add bacon; cook 2 to 3 min.
- on each side or until lightly browned.
- Add 2 Tbsp.
- barbecue sauce; turn to coat both sides of each bacon slice with glaze.
- Remove from heat; cover to keep warm.
- Heat remaining oil in small skillet on medium-high heat.
- Add vegetables; cook and stir 5 min.
- or until tender.
- Add remaining barbecue sauce; cook and stir 1 min.
- Mix Miracle Whip and mustard; spread onto bottoms of buns.
- Fill with bacon and vegetable mixture.
