Kitty's Potato Fritters #5FIX
- 1 (20 ounce) bag Simply Potatoes Shredded Hash Browns
- 2 eggs
- 2 limes
- 1 12 cups parmigiano-reggiano cheese
- 1 fresno chile pepper
- Beat the two eggs in a large mixing bowl.
- Zest one lime into the egg with a fine rasp type grater.
- Grate 1 and 1/2 cups of Parmigiano Reggiano with that same rasp type grater and add to egg mixture.
- Use a a truffle slicer or hand mandolin slicer to cut the Fresno chili into thin rings.
- Use a sharp knife to cut each ring of chili into thin strips and add them to the egg mixture.
- Fold the egg mixture to blend added ingredients and then fold in the bag of of Simply Potatoes Shredded Hash Browns.
- Form flat discs/ pancake like 1/2 cup portions with your hands.
- Pan fry each fritter in canola oil for about 8 minutes on each side in a non-stick saute pan on a medium to medium high flame.
- When they are golden brown-- remove to a paper towel to drain.
- Serve at least two warm fritters per person.
- You can squeeze some fresh lime juice over them from you left over above or slice thin wedges of fresh lime and add them as garnish.
