Curried Lentil Salad Recipe
- 2 c. lentils
- 1 bay leaf
- 1/2 c. oil
- 2-3 garlic
- Thyme
- Basil
- Rosemary
- Salt
- Pe pper
- 1/2 c. vinegar
- 1 tbsp. mustard
- 1 can chunks pineapple, liquid removed
- 6-8 tomatoes, cut up
- 1 onion, cut up
- Cook lentils in water with bay leaf and salt if you like till tender.
- Saute/fry garlic and spices in oil.
- Add in vinegar and mustard.
- Mix with lentils.
- Refrigerateovernight.
- Add in pineapple, tomatoes, and onion.
