Sausage and Spinach Soup
- Vegetable cooking spray
- 1/2 lb. sweet Italian pork sausage
- 4 c. Swanson Chicken Broth
- 1/2 tsp. dried oregano leaves
- 1 medium onion
- 1 medium carrot
- 2 c. coarsely chopped fresh spinach leaves
- Spray a 4-quart saucepot with the cooking spray and heat over medium-high heat for 1 minute.
- Add the sausage and cook until it's well browned, stirring often.
- Pour off any fat.
- Stir the broth, oregano, onion and carrot in the saucepan.
- Heat to a boil.
- Reduce the heat to low.
- Cover and cook for 10 minutes or until the sausage is cooked through.
