Pasta Salad
- 6 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- salt
- pepper
- 1 12 cups orzo pasta
- 1 cup tomatoes, chopped
- 1 cup cucumber, chopped
- 12 cup sweet red pepper, chopped
- 12 cup yellow sweet pepper, chopped
- 23 cup red onion, diced
- 24 kalamata olives
- 34 cup feta cheese, crumbled
- In a small bowl, whisk together oil, vinegar, basil, oregano, and salt and pepper.
- Set aside.
- SALAD:.
- In a large saucepan, cook pasta in boiling salted water for about 10 minutes or until tender.
- Drain and rinse with cold water.
- Drain well and place in a large bowl.
- Stir in dressing.
- Stir in tomatoes, cucumbers, red and yellow peppers, onions and olives.
- Cover and let stand until serving.
- Refrigerate if longer than 1 hour.
- Top with feta cheese.
