Mini BBQ Ribs
- 2 qt. brewed coffee Walgreens $6.99 thru 02/06
- 96 pieces pork baby back ribs (12 ribs per rack), cut lengthwise in half, then cut into single rib pieces
- 1 qt. Kraft BarBQ Sauce
- 1 qt. Miracle Whip Calorie-Wise Spread Family Dollar $3.50 thru 02/07
- 1 qt. frozen orange juice concentrate, thawed
- 4 each canned chipotle peppers in adobo sauce
- 1 cup brown sugar, packed
- 1/2 cup Sriracha sauce (hot chili sauce)
- 1/4 cup honey
- Pour coffee over ribs in full-hotel pan (or in half-hotel pan for trial recipe).
- Cover with foil.
- Bake in 350 degrees F standard oven 2 hours.
- Mix remaining ingredients in saucepan.
- Bring to simmer on medium heat, stirring frequently.
- Remove from heat.
- Remove ribs from oven; drain and discard liquid.
- Reserve 3 cups (750 mL) of the barbecue sauce mixture (or reserve 3/4 cup 175 mL of the sauce for trial recipe).
- Brush ribs generously with remaining sauce.
- Continue baking, uncovered, 45 min.
- or until sauce is caramelized.
- For each serving: Plate 4 rib pieces.
- Serve with a 1-oz.
- (30-g) container of the reserved sauce.
