Tomatokeftedes, Greek pancakes
- 1- 1/2 cup Flour
- 1 teaspoon Baking Powder
- 1 whole Egg
- 3 whole Tomatoes, Blanched And Diced
- 1/2 whole Onion, Chopped
- 1/4 bunches Fresh Mint, Chopped
- 1/4 bunches Fresh Parsley, Chopped
- Salt And Pepper
- Cooking Oil For Frying
- Mix flour and baking powder togehter.
- Add the egg and mix, then add tomatoes, onion, mint and parsley and mix.
- Season with salt and pepper.
- Heat oil in a frying pan to a medium heat.
- Drop tablespoons of batter into the hot oil a few at a time.
- Cook 3 minutes on each side or until golden.
- Repeat with remaining batter.
- Drain on a paper towel and serve immediately.
