Tomatokeftedes, Greek pancakes

  1. Mix flour and baking powder togehter.
  2. Add the egg and mix, then add tomatoes, onion, mint and parsley and mix.
  3. Season with salt and pepper.
  4. Heat oil in a frying pan to a medium heat.
  5. Drop tablespoons of batter into the hot oil a few at a time.
  6. Cook 3 minutes on each side or until golden.
  7. Repeat with remaining batter.
  8. Drain on a paper towel and serve immediately.
