Green Chili Soup with Chicken or Turkey
- 2 cups baked turkey
- chicken leftovers (or browned ground turkey)
- 12 fl. oz. chicken stock
- 2 garlic cloves
- 1 md. sized onion
- Roasted green chilies (as much and as hot as you can handle- I use a frozen container of hot)
- 1 green pepper, diced
- Salt and pepper to taste
- Monterey Jack cheese quesadillas
- Corn, hominy, cooked diced potato, diced jalapeno, cooked rice, stewed tomato, kidney beans (add cooked ingredients within the last hour of cooking) - optional
- Add ingredients to pot on stove top set at medium high, or in crock pot on high.
- Cook for 2-3 hours.
- Put cooked ingredients in during last hour of cooking.
