Cilantro Lime Rice
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 2 each scallions, spring or green onions sliced
- 4 cups rice cooked
- 4 tablespoons cilantro chopped
- 1 tablespoon lime juice or to taste, fresh
- 1 scoop salt and black pepper to taste
- 1 x limes wedges, to serve, optional
- In a large nonstick skillet or a wok, heat the olive oil over medium-high heat until hot.
- Add the garlic and scallions, stirring frequently, and cook for about 1 minute until very fragrant.
- Add the rice, stirring often, and cook for 3 to 5 minutes.
- Stir in cilantro and lime juice until evenly combined and heated through, about 2 minutes.
- Season with salt and black pepper to taste.
- Serve warm with more lime wedges if desired.
