Broiled Red Fish Lafitte
- 1 stick butter
- 4 to 6 (8 oz.) red fish fillets
- 1 c. flour
- 3 lb. crawfish meat
- 1/2 c. green onions
- 1 tsp. lobster base (found in spice department)
- 3 c. water
- 2 tsp. chopped parsley
- 3 bay leaves
- 1/4 tsp. thyme
- 1/4 tsp. cayenne pepper
- dash of granulated onion
- 1/2 tsp. garlic, chopped
- juice of 1 lemon
- salt and pepper to taste
- Season red fish on both sides and lightly flour.
- Broil in butter and pour lemon juice on fish when done; keep warm.
- Place butter in saucepan.
- Add flour and stir until light brown.
- Add crawfish, lobster base and water.
- Bring to a boil, then add all other ingredients and simmer about 10 minutes.
- Serve seafood mixture over fish.
