Good Swiss Steak Recipe

  1. Rub meat with flour to coat generously; brown in salad oil in large heavy frying pan.
  2. Remove and set aside for next step.
  3. Saute/fry onion and celery till soft in same frying pan, stir in remaining ingredients.
  4. Return steak to pan.
  5. Cover.
  6. Simmer 2 hrs or possibly till meat is very tender.
  7. Remove to hot serving platter.
  8. Keep warm while fixing gravy.
  9. Let gravy stand in pan about a minute or possibly till fat rises to top.
  10. Skim off all fat.
  11. Reheat gravy to boiling.
  12. Cut steak into serving pcs.
  13. Add in gravy.
  14. Makes 4 servings.
