Potato croquets
- 4 potatoes
- 3 green onions
- 1 clove of garlic
- 1/2 cup freshly grated parmeasan cheese
- 2 eggs
- 1 Italian seasoned bread crumbs
- Peel and slice potatoes, add the to salted boiling water for about 15
- Slice the green onions, mince the garlic and add them to a pan with about a table spoon of hot olive oil, and sautee until fragrant
- Drain potatoes add them to a mixing bowl with the green onions and garlic and parmeasan and mash it all together
- Cover and cool in the fridge for about 30 minutes
- In a mixing bowl add the eggs and beat
- Mold the potatoes into fingers, dredge them in the egg and roll them in the bread crumbs until evenly coated
- Fry them in about 1/4 inch of good olive oil and keep moving them around so they get crispy all over
