Candied Sweet Potatoes
- 4 sweet potates, peeled and quartered
- 1 cup pineapple juice
- 3/4 cup brown sugar
- 1 tsp. ground cinnamon
- 1-1/4 cup mini-marshmallows
- Place sweet potatoes in a square casserole dish.
- Mix together pineapple juice and brown sugar; pour over sweet potatoes.
- Sprinkle cinnamon over sweet potatoes.
- Bake at 375F for 35 minutes.
- Remove from oven and cover with marshmallows.
- Place in oven until marshmallows are melted and lightly browned.
