Corn and Shrimp Soup
- 1 cup flour
- 1/2 cup cooking oil
- 1 lg. onion, chopped
- 1 cup green onions, chopped
- 1 stick butter
- 1 lb. peeled shrimp
- 1 can Ro-Tel
- 3 cans whole kernel corn
- 4 cups water
- Heat cooking oil and add flour to make roux.
- cook until brown.
- Add onions and simmer until onions are wilted, Add Ro-Tel and simmer for about 10 minuters.
- Add wdter; simmer until close to boiling and add corn, , butter and shrimp.
- Cook on medium heat until shirmp are cooked, about 30-45 minutes.
