Soft Apple Ginger Spice Cookies

  1. Preheat oven to 325F.
  2. Line baking sheets with parchment paper, or coat with cooking spray.
  3. Whisk together flour, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt in large bowl.
  4. Whisk together oil, applesauce, and molasses in separate large bowl.
  5. Whisk in 3/4 cup sugar.
  6. Stir in flour mixture with spatula.
  7. Fold in diced apple.
  8. Place remaining 1/2 cup sugar in bowl.
  9. Roll 1/4 cup dough into ball, then roll ball in sugar.
  10. Repeat with remaining dough.
  11. Place balls on prepared baking sheets.
  12. Put baking sheets in oven, and bake 20 to 25 minutes, or until tops of cookies are dry and bottoms are golden brown.
  13. Transfer to wire rack to cool.
