Vegetable Stock
- 2 carrots, sliced
- 1 leek (white only)
- 1/2 celery, sliced
- 1/2 fennel, sliced
- 4 shallots, chopped
- 4 button onions, sliced
- 1 bouquet garni
- 1 clove garlic, minced
- 13 fl. oz. dry white wine
- Place all ingredients in a large pot and cover with cold water and bring up to the boil slowly.
- Cook out for no longer than 30 minutes, then strain.
