Hat Trick

  1. Fill a cocktail shaker with ice.
  2. Add the sherry, Aperol and 2 dashes of bitters and shake well.
  3. Strain into a chilled flute.
  4. Top with the Prosecco and garnish with a dash of bitters and the lemon twist.
