Grilled Bacon-Scallion-Garlic-Parmesan Baby Portobella Mushrooms

  1. Preheat grill to medium heat.
  2. Remove stems from mushrooms and discard.
  3. Brush tops and insides of mushrooms with olive oil.
  4. Grill for 3 minutes, turn and grill another 3 minutes.
  5. Remove to a serving plate and cover.
  6. Meanwhile, in a medium skillet, fry bacon.
  7. Remove bacon to a plate lined with a paper towel.
  8. When cooled down, crumble into small pieces.
  9. Into a heat-proof container, drain bacon grease, reserving about 1 tbs.
  10. Return skillet to heat.
  11. In the hot skillet, sautee scallions and garlic until tender.
  12. Remove from heat and set aside.
  13. Turn mushrooms so that the insides are exposed.
  14. Sprinkle with scallion-garlic mixture, crumbled bacon and then grated parmesan cheese.
  15. Serve and enjoy!
