Grandma'S Oatmeal Bread

  1. In a small mixing bowl, combine boiling water, butter, salt and sugar.
  2. Stir in oats; cool to lukewarm.
  3. In a large mixing bowl, dissolve yeast in warm water.
  4. Stir in molasses, brown sugar and 1 cup flour.
  5. Beat until smooth.
  6. Add oat mixture and enough remaining flour to make a stiff dough.
  7. Turn out onto a floured board; knead until smooth and elastic, about 6 to 8 minutes. Shape into a ball.
  8. Place in a greased bowl, turning once to grease top.
  9. Cover and allow to rise until doubled, about 1 1/2 hours.
  10. Punch dough down; divide in half and shape into balls. Cover and let rest 10 minutes.
  11. Shape into loaves and place in two greased 1 x 5 x 3-inch loaf pans.
  12. Cover and let rise until nearly doubled, about 1 hour.
  13. Bake at 375u0b0 for 35 minutes.
  14. Cover loosely with foil the last 20 minutes if loaves are browning excessively.
  15. Remove from pans and cool on wire rack.
  16. Yield:
  17. 2 loaves.
