Vegetable Paella Recipe

  1. Fry bacon till crisp in 10 inch skillet; remove to paper towel.
  2. Pour off all but 2 Tbsp.
  3. drippings.
  4. Saute/fry garlic in drippings till lightly browned.
  5. Add in vegetables; toss lightly.
  6. Add in water and rice.
  7. Cover and simmer 3 to 4 min.
  8. Combine spaghetti sauce mix with tomato sauce; pour over vegetables.
  9. Add in bay leaf, warm pepper sauce, salt, and fried bacon.
  10. Simmer and stir till done, about 7 to 8 min.
  11. Remove bay leaf.
  12. Turn into serving bowl.
  13. Sprinkle with sliced olives.
  14. Garnish with avocado slices.
  15. Makes 6 servings.
  16. NOTES: Mediterranean vegetables consist of a mix of corn, peas, sliced celery, onions, and red and green peppers.
