Individual Coconut Pound Cakes

  1. Heat oven to 350F.
  2. Combine sugar, butter and cream cheese in large bowl.
  3. Beat at medium speed, scraping bowl often, until creamy.
  4. Add milk, eggs and vanilla.
  5. Continue beating until smooth.
  6. Stir in flour and coconut.
  7. Spoon into paper-lined or greased muffin cups, filling each 3/4 full.
  8. Bake 32-38 minutes or until light golden brown.
  9. Serve warm or at room temperature; top with fruit preserves or jam.
