Zucchini, Walnut and Blue Cheese Flatbread Toppings

  1. Prepare Flatbread Dough.
  2. Preheat oven to 475 degrees.
  3. Place a large nonstick skillet coated with cooking spray over medium-high heat.
  4. Add zucchini, salt and pepper, and saute 8 minutes.
  5. Add onions and walnuts; saute 1 minute more.
  6. Combine ricotta cheese and blue cheese in a small bowl.
  7. Divide half of zucchini mixture among 4 flatbread dough ovals; dot evenly with cheese mixture.
  8. Top with remaining zucchini mixture and oregano.
  9. Bake at 475 degrees for 15 minutes.
