Simple Biga
- 1 3/4 cups whole wheat flour
- 1/4 teaspoon instant yeast
- 3/4 cup + 2 tbsp. water
- Mix all ingredients together and knead for 2 minutes.
- Let the dough rest for 5 minutes.
- Then knead it again for 1 minute.
- Place the dough in a bowl, cover tightly with plastic for at least 8 hours in refrigerator.
- Then it is ready when you are to make your dough.
- Note: 2 hours prior to final mixing a dough recipe pull "biga" out of the refrigerator to come up to room temp.
