Simple Biga

  1. Mix all ingredients together and knead for 2 minutes.
  2. Let the dough rest for 5 minutes.
  3. Then knead it again for 1 minute.
  4. Place the dough in a bowl, cover tightly with plastic for at least 8 hours in refrigerator.
  5. Then it is ready when you are to make your dough.
  6. Note: 2 hours prior to final mixing a dough recipe pull "biga" out of the refrigerator to come up to room temp.
