Mediterranean Broccoli Salad
- 8 cups boiling water
- 4 cups bite-sized broccoli florets
- 14 cup olive oil
- 1 garlic clove, minced
- 14 cup lemon juice
- 1 teaspoon lemon zest
- 14 teaspoon salt
- 14 teaspoon fresh ground pepper
- 12 chopped red bell pepper
- 12 cup halved black olives
- 13 cup crumbled feta cheese
- Drop the broccoli into boiling water for 2 minutes.
- Pour into a colander to drain.
- Quickly plunge into ice water to stop the cooking.
- Drain and chill 30 minutes, or longer.
- Whisk the olive oil, garlic, lemon juice and lemon zest.
- Season with salt and pepper, to taste.
- Combine with the chilled broccoli.
- Mix in the red pepper and olives.
- Garnish with the feta cheese.
