Mediterranean Broccoli Salad

  1. Drop the broccoli into boiling water for 2 minutes.
  2. Pour into a colander to drain.
  3. Quickly plunge into ice water to stop the cooking.
  4. Drain and chill 30 minutes, or longer.
  5. Whisk the olive oil, garlic, lemon juice and lemon zest.
  6. Season with salt and pepper, to taste.
  7. Combine with the chilled broccoli.
  8. Mix in the red pepper and olives.
  9. Garnish with the feta cheese.
