Sweet Hot Pork Medaillons

  1. Trim fat from pork, and cut into 1-inch thick slices.
  2. Place slices between 2 sheets of plastic wrap and flatten to 1/2 inch thickness.
  3. Sprinkle with pepper and garlic powder.
  4. Heat oil in a large nonstick skillet coated w/cooking spray over medium-high heat.
  5. Add half of pork medaillons and cook 3 minutes on each side or until browned.
  6. Remove pork from skillet.
  7. Set aside and keep warm.
  8. Repeat procedure with remaining half of pork medaillons.
  9. Remove pan from heat.
  10. Add water, soy sauce, and brown sugar.
  11. Deglaze pan over medium heat 1 to 2 minutes or until mixture is slightly thickened.
  12. Pour glaze over pork.
