Sweet Hot Pork Medaillons
- 1 lb pork tenderloin
- 14 teaspoon crushed red pepper flakes
- 18 teaspoon garlic powder
- 1 teaspoon dark sesame oil
- cooking spray
- 14 cup water
- 2 tablespoons low sodium soy sauce
- 2 tablespoons brown sugar
- Trim fat from pork, and cut into 1-inch thick slices.
- Place slices between 2 sheets of plastic wrap and flatten to 1/2 inch thickness.
- Sprinkle with pepper and garlic powder.
- Heat oil in a large nonstick skillet coated w/cooking spray over medium-high heat.
- Add half of pork medaillons and cook 3 minutes on each side or until browned.
- Remove pork from skillet.
- Set aside and keep warm.
- Repeat procedure with remaining half of pork medaillons.
- Remove pan from heat.
- Add water, soy sauce, and brown sugar.
- Deglaze pan over medium heat 1 to 2 minutes or until mixture is slightly thickened.
- Pour glaze over pork.
