Frosted Raisin Squares
- 1 cup raisins
- 23 cup boiling water
- 1 teaspoon instant coffee
- 1 teaspoon cinnamon
- 12 cup butter
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 12 cups flour
- 12 teaspoon baking soda
- 12 teaspoon baking powder
- 1 cup milk
- 12 cup butter
- 2 cups icing sugar
- 2 tablespoons milk (or enough to make icing of spreading consistency)
- 1 teaspoon vanilla
- 12 cup chopped walnuts (or more, if you desire)
- Pour boiling water over raisins.
- Sprinkle with instant coffee and cinnamon.
- Let cool.
- Meanwhile, mix all batter ingredients together.
- Pour liquid off raisins and add liquid to batter.
- Mix well.
- Add raisins to batter.
- Pour mixture into jelly roll pan and bake for 20 minutes at 320 degrees F.
- Let cool.
- Meanwhile, make icing: Cream butter.
- Add icing sugar.
- Add milk, a little at a time, and blend well.
- Blend in vanilla.
- When cake is cool, frost with icing.
- Sprinkle with chopped walnuts.
- Cut into squares.
