Zucchini-Carrot Bread
- 3 eggs
- 1/2 c. salad oil
- 1/2 c. brown sugar, packed
- 1/2 c. white sugar
- 1 c. carrots, grated medium
- 1 c. zucchini, grated medium and drained
- 2 tsp. vanilla
- 2 1/2 c. flour
- 1/2 c. bran cereal
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 3 tsp. cinnamon
- 1 c. chopped nuts (optional)
- 1 c. raisins
- Preheat oven to 350u0b0.
- Grease pans (three 5 1/2 x 9 1/2 x 3-inch if double).
- In large bowl, beat eggs with oil.
- Stir in sugar, zucchini, carrots and vanilla.
- Mix flour, baking soda, baking powder, salt and cinnamon.
- Blend into egg and oil, etc. and add raisins.
- Bake 1 hour or until tested with toothpick. Remove from pan and cool.
