The Bellini Variations
- 6 peaches
- 4 pink grapefruit
- 2 pints strawberries
- 1 bottle sparkling Italian wine (Prosecco or spumante)
- Peel, pit and blend peaches until smooth and pour into a glass pitcher.
- Juice grapefruits and pour into a glass pitcher.
- Hull and rinse strawberries, and blend until smooth.
- Pour purees according to taste, about one-third full into 6 beautiful champagne flutes and fill slowly with sparkling wine.
- Serve immediately with 1 long cocktail spoon.
