The Bellini Variations

  1. Peel, pit and blend peaches until smooth and pour into a glass pitcher.
  2. Juice grapefruits and pour into a glass pitcher.
  3. Hull and rinse strawberries, and blend until smooth.
  4. Pour purees according to taste, about one-third full into 6 beautiful champagne flutes and fill slowly with sparkling wine.
  5. Serve immediately with 1 long cocktail spoon.
