Pomegranate Nutty Granola
- 2 cups Pomegranate Juice
- 2 teaspoons Lemon Juice
- 1/4 cups Granulated Sugar
- 1/4 cups Brown Sugar
- 1/2 cups Pomegranate Syrup (recipe Above)
- 1/2 cups Unsalted Walnuts
- 1/2 cups Unsalted Pecans
- 1/2 cups Almonds
- 1/2 cups Unsalted Sunflower Kernels
- 1/4 cups Pine Nuts (optional)
- 2- 1/2 cups Uncooked Old Fashioned Oats
- 1 teaspoon Salt
- Preheat oven to 300F.
- Add pomegranate juice, lemon juice, and white granulated sugar to small saucepan.
- Bring to a boil over high heat and stir until sugar is dissolved.
- Decrease temperature, then simmer over medium to medium low heat until reduced by a little over half.
- This should take about 45 minutes all together.
- EYE IT.
- Allow to cool, juice will have a syrupy texture.
- Once cooled, stir in the brown sugar until dissolved.
- Now, add nuts, oats, and salt to a large bowl.
- Pour 1/2 cup of the syrup mixture over nuts and oats then stir in well.
- Spray a baking sheet with cooking spray, and spread mixture evenly on sheet.
- Bake 35 to 40 minutes stirring every 10 minutes.
- Doesnt it smell divine?
- Allow to cool 30 minutes on cooling rack, then have your way with it!
