Spicy Chicken Wings.

  1. Cut the wing tips off all the wings.
  2. Then cut the wings in half by the joint, so that you end up with 40 pieces
  3. Boil the wings for 4 minutes, make sure that the water is on a roiling boil before you put the wings in the pot.
  4. Remove and strain all the water off.
  5. Deep fry the wings for 4 minutes at 190C.
  6. Remove and strain the oil off.
  7. You can replace step 2 & 3 by grilling the wings in a preheated oven, 220 degrees C for 10-12 minutes.
  8. I prefer step 1 & 2.
  9. Season the wings with salt and chicken spice.
  10. Toss the wings in a preheated frying pan with 150ml peri-peri or chilli sauce 3-5 minutes or until all the sauce sticks to the wings.
  11. Serve with side dishes of peri-peri or chilli sauce and roquefort dressing to dunk the wings in.
  12. And some chips if you serve it as a meal.
