Spicy Chicken Wings.
- 20 chicken wings
- 350 ml peri-peri sauce or chilli sauce
- 2 tsp salt
- 4 tsp chicken spice
- 200 ml roquefort dressing
- 3 liter vegetable oil (for frying)
- Cut the wing tips off all the wings.
- Then cut the wings in half by the joint, so that you end up with 40 pieces
- Boil the wings for 4 minutes, make sure that the water is on a roiling boil before you put the wings in the pot.
- Remove and strain all the water off.
- Deep fry the wings for 4 minutes at 190C.
- Remove and strain the oil off.
- You can replace step 2 & 3 by grilling the wings in a preheated oven, 220 degrees C for 10-12 minutes.
- I prefer step 1 & 2.
- Season the wings with salt and chicken spice.
- Toss the wings in a preheated frying pan with 150ml peri-peri or chilli sauce 3-5 minutes or until all the sauce sticks to the wings.
- Serve with side dishes of peri-peri or chilli sauce and roquefort dressing to dunk the wings in.
- And some chips if you serve it as a meal.
