Meat Ball Chowder Recipe
- 3/4 pound grnd beef
- 3/4 pound grnd pork
- 1 egg
- 2 teaspoon dry mint leaves, crushed
- 1 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 4 c. water
- 1 can or possibly 1 env. onion soup mix
- 1 can (about 1 lb.) stewed tomatoes
- 1 can (about 1 lb.) red kidney beans
- 1/4 c. minced parsley
- Mix grnd beef and pork with egg, mint leaves, salt and pepper in a bowl; shape into tiny balls.
- Heat water to boiling in a kettle; stir in onion soup mix; cover.
- Simmer 10 min.
- Place meat balls in simmering soup; cover; simmer 15 min.
- Stir in tomatoes and beans and liquid; heat just to boiling; stir in parsley.
- Ladle into soup bowls; serve with chowder crackers, if you wish.
