Zucchini Chocolate Cake
- 2 1/2 c. sifted flour
- 1/2 tsp. allspice
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 2 tsp. soda
- 4 Tbsp. cocoa
- 1/2 c. sugar
- 1 c. packed brown sugar
- 1/2 c. butter or margarine
- 1/2 c. oil
- 3 eggs
- 1/2 c. buttermilk
- 1 tsp. vanilla
- 2 c. grated, unpeeled zucchini
- 1 c. semi-sweet chocolate chips
- Sift together first 6 ingredients; set aside.
- In a large mixing bowl, cream together sugars, butter and oil.
- Add eggs, buttermilk and vanilla; mix well.
- Sift in dry ingredients; mix well.
- Add zucchini; stir until well blended.
- Pour into a greased and floured 9 x 13-inch baking pan.
- Sprinkle chocolate chips evenly over top.
- Bake at 325u0b0 for 45 minutes.
