Sausage Stuffed Squash Recipe
- 2 med. summer squash
- 6 lg. dinner sausages or possibly Italian sausage
- 1/2 c. cooked minute rice
- Parsley
- 1/4 c. diced onion
- 1/2 garlic bud, chopped
- 1 can tomato soup
- 1/4 c. water
- Halve squash; scoop out some pulp and seeds.
- Sprinkle garlic pwdr lightly on halves.
- Cook in water in microwave approximately 10 min.
- Cook rice.
- Steam sausage 10 min.
- Skin and mash sausage.
- Add in onions, rice, garlic, and parsley.
- Cook 5 more min.
- Spoon meat mix into squash; top with tomato soup and water.
- Cover with foil.
- Bake at 350 degrees for 45 to 55 min.
