Mediterranean Salad
- 1 lb box of orzo pasta
- 2 red bell peppers, seeded and diced small
- 3/4 cup kalamatta olives, pitted
- 6 green onions, thin slice
- 6 oz crumbled feta cheese
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine viegar
- 2 tsp salt
- 1 tsp ground pepper
- 3 clove of garlic, minced
- 1/4 cup chopped fresh parsley
- 1/2 tsp red pepper flakes( optional)
- 1 anchiove fillet ( optional) finely chopped
- In large pot of salted boiling water, cook orzo for 8-10 minutes or until desired doneness.
- Drain.
- In another bowl mix garlic, salt and pepper ,anchiove and pepper flakes if using , oil and vinegar.
- Set aside.
- Into pasta add peppers, onion, olives, and feta.
- Toss in oil and vinegar mixture.
- Toss well and add parsley last.
- Can serve warm or refrigerate one hour before serving.
- This is delicious served along side of grilled meats.
